Walk - a - Workshop: 3:00pm
Our first June Farm Table starts with an enrichment walking workshop with Naia Seda; owner and Farmer of Nueva Cosecha Farm located in Lajas. She will introduce her farm life and nourish us with her knowledge about:

  • Why trees are the pillars of agroecological farming

  • Explain the “ecology of the food system” and the farming approach that inspires and is inspired by the natural ecosystem

  • How the interactions are crucial between plants, animals, humans, and the environment combines local and scientific knowledge

Be inspired by Nueva Cosecha’s Impact Story after Hurricane María

Sweet Labor: 4:00pm

Time to relax or get a bit dirty! You can take a walk around the farm or choose between:

  1. join the team that will be helping Naia plant some trees,

  2. join the conversation while cleaning turmeric,

a perfect way to ground yourself and appreciate hands on this beautiful hard work.

Let’s get fancy! 5:00pm
Have you ever tasted the freshness? We will be gathering ingredients right from Naia’s farm and the surrounding community of farmers to the improvised kitchen in the field. We trust Chef Angel Crespo, revered chef of Seviche, and currently to delight us with his subtle grand’ flavors. We have an honored guest... The local fish...

Chef Angel Crespo Backstory

“Although I always liked cooking, since my family had a restaurant in Cabo Rojo, my first job in a kitchen was as a dishwasher in the now-defunct La Casona de Serafín Restaurant. At that time there weren't many options for studying culinary arts so I packed myself with cookbooks and learned a lot from them. After working in different restaurants in the area, I had the opportunity to work in the best and most exclusive restaurant "El Estoril", where it was truly my great university. Then came to Mayagüez Puerto Rico my formal educational opportunity with Puerto Rico Tech Junior College, where I studied at night while working at "El Estoril”. I had a cafeteria of mine as well. With an unborn daughter, I told myself that I would dedicate myself to culinary arts for the rest of my life. It’s been 34 years and counting.” - Chef Ángel Crespo
